Description

A fresh, zesty tuna salad that replaces heavy mayonnaise with a bright lemon and olive oil vinaigrette. Packed with crunchy vegetables and lean protein.


Ingredients

  • 2 cans (5oz each) tuna in water, drained
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1/4 cup finely diced celery
  • 2 tbsp finely diced red onion
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Drain the tuna cans thoroughly, pressing against the lid to remove excess liquid.
  2. Flake the tuna into a medium mixing bowl using a fork.
  3. In a small jar or bowl, whisk together olive oil, lemon juice, lemon zest, and Dijon mustard until emulsified.
  4. Add diced celery, red onion, and chopped parsley to the tuna.
  5. Pour the dressing over the tuna mixture and fold gently with a spatula to combine.
  6. Season with salt and black pepper to taste and serve chilled.
