- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 medium Granny Smith apples, finely diced
- 1 tbsp butter (for sautéing apples)
- 1 tbsp cinnamon-sugar (for apples)
Instructions
- Sauté diced apples in 1 tbsp butter and cinnamon-sugar over medium heat until softened. Let cool completely.
- Cream together softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- Whisk together flour, baking soda, and cinnamon, then stir into the wet ingredients until just combined.
- Fold in the cooled sautéed apples gently with a spatula.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake at 350F (175C) for 10-12 minutes or until edges are lightly golden.
- Cool on the pan for 5 minutes before moving to a wire rack.
