  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda

  • 2 medium Granny Smith apples, finely diced
  • 1 tbsp butter (for sautéing apples)
  • 1 tbsp cinnamon-sugar (for apples)

Instructions

  1. Sauté diced apples in 1 tbsp butter and cinnamon-sugar over medium heat until softened. Let cool completely.
  2. Cream together softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. Whisk together flour, baking soda, and cinnamon, then stir into the wet ingredients until just combined.
  5. Fold in the cooled sautéed apples gently with a spatula.
  6. Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
  7. Bake at 350F (175C) for 10-12 minutes or until edges are lightly golden.
  8. Cool on the pan for 5 minutes before moving to a wire rack.
