Description

Tender cake donuts made with reduced apple cider for an intense autumn flavor and coated in cinnamon sugar.


Ingredients

Scale
  • 2 cups apple cider (reduced to 2/3 cup)
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 4 tbsp unsalted butter, melted
  • 1 large egg
  • 1/2 cup sugar and 1 tbsp cinnamon for coating
  • Neutral oil for frying

Instructions

  1. Simmer 2 cups of apple cider in a pan until it reduces to about 2/3 cup.
  2. Whisk flour, baking powder, salt, and cinnamon in a bowl.
  3. Beat egg, sugar, and melted butter, then stir in the cooled cider reduction.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Heat oil to 350F in a heavy pot.
  6. Drop tablespoon-sized portions of batter into oil and fry for 2 minutes per side.
  7. Remove donuts and immediately toss in the cinnamon-sugar mixture.
