Description
Tender cake donuts made with reduced apple cider for an intense autumn flavor and coated in cinnamon sugar.
Ingredients

- 2 cups apple cider (reduced to 2/3 cup)
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 4 tbsp unsalted butter, melted
- 1 large egg
- 1/2 cup sugar and 1 tbsp cinnamon for coating
- Neutral oil for frying
Instructions
- Simmer 2 cups of apple cider in a pan until it reduces to about 2/3 cup.
- Whisk flour, baking powder, salt, and cinnamon in a bowl.
- Beat egg, sugar, and melted butter, then stir in the cooled cider reduction.
- Fold dry ingredients into wet ingredients until just combined.
- Heat oil to 350F in a heavy pot.
- Drop tablespoon-sized portions of batter into oil and fry for 2 minutes per side.
- Remove donuts and immediately toss in the cinnamon-sugar mixture.
