Description

A traditional Finnish creamy salmon soup known as Lohikeitto. This hearty Nordic chowder blends tender salmon, potatoes, and fresh dill in a velvety cream broth.


Ingredients

  • 1.5 lbs salmon fillet, cubed
  • 4 medium potatoes, cubed
  • 2 carrots, sliced
  • 1 medium onion, finely diced
  • 3 tbsp butter
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1/2 cup fresh dill, chopped
  • 1/2 tsp allspice
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat and sauté onions and carrots until softened.
  2. Add cubed potatoes and fish stock, then bring to a gentle boil.
  3. Reduce heat and simmer for 10-12 minutes until potatoes are tender.
  4. Stir in allspice, salt, and pepper.
  5. Pour in heavy cream and stir gently to combine.
  6. Add salmon chunks and simmer for 3-5 minutes until fish is opaque.
  7. Stir in fresh dill and lemon juice, then remove from heat immediately.
