- 3 medium zucchinis, diced or grated
- 5 oz fresh baby spinach
- 7 oz feta cheese, crumbled
- 3 large eggs, beaten
- 3 cloves garlic, minced
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp salt (optional, depending on feta saltiness)
Instructions
- Preheat your oven to 375F (190C) and grease a 9×9 inch baking dish.
- If grating zucchini, toss with salt, let sit for 10 minutes, then squeeze out all excess moisture using a clean kitchen towel.
- Heat olive oil in a pan over medium heat, sauté minced garlic for 1 minute until fragrant.
- Add fresh spinach to the pan and stir until wilted, then remove from heat.
- In a large bowl, combine zucchini, wilted spinach, and crumbled feta cheese.
- Stir in the beaten eggs and black pepper until everything is well incorporated.
- Pour the mixture into the prepared baking dish and top with grated Parmesan cheese.
- Bake for 25-30 minutes until the top is golden brown and the center is set.
- Let cool for 5 minutes before slicing and serving.
