Description

A savory Mediterranean-inspired bake combining tender zucchini, fresh spinach, and salty feta cheese. This healthy, low-carb casserole is perfect as a side dish or a light vegetarian main.


Ingredients

  • 3 medium zucchinis, diced or grated
  • 5 oz fresh baby spinach
  • 7 oz feta cheese, crumbled
  • 3 large eggs, beaten
  • 3 cloves garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/4 tsp salt (optional, depending on feta saltiness)

Instructions

  1. Preheat your oven to 375F (190C) and grease a 9×9 inch baking dish.
  2. If grating zucchini, toss with salt, let sit for 10 minutes, then squeeze out all excess moisture using a clean kitchen towel.
  3. Heat olive oil in a pan over medium heat, sauté minced garlic for 1 minute until fragrant.
  4. Add fresh spinach to the pan and stir until wilted, then remove from heat.
  5. In a large bowl, combine zucchini, wilted spinach, and crumbled feta cheese.
  6. Stir in the beaten eggs and black pepper until everything is well incorporated.
  7. Pour the mixture into the prepared baking dish and top with grated Parmesan cheese.
  8. Bake for 25-30 minutes until the top is golden brown and the center is set.
  9. Let cool for 5 minutes before slicing and serving.
