Description

Soft, spiced apple cider cake cookies sandwiched with a rich, buttery salted caramel filling. A cozy autumn treat that is both nostalgic and sophisticated.


Ingredients

  • 2 cups apple cider (reduced to 1 cup)
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup granulated sugar (for caramel)
  • 4 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1/2 tsp sea salt

Instructions

  1. Simmer apple cider in a pan until reduced by half. Let cool.
  2. Cream butter and brown sugar until fluffy.
  3. Mix in eggs and the cooled cider reduction.
  4. Sift and fold in flour, baking soda, cinnamon, and salt.
  5. Scoop batter onto lined sheets and bake at 350F for 10-12 minutes.
  6. Melt sugar and butter for caramel, stir in cream and salt, then simmer until thick.
  7. Pipe caramel onto cooled cakes and top with a second cake.
