- 2 cups apple cider (reduced to 1 cup)
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 1 cup granulated sugar (for caramel)
- 4 tbsp unsalted butter (for caramel)
- 1/2 cup heavy cream
- 1/2 tsp sea salt
Instructions
- Simmer apple cider in a pan until reduced by half. Let cool.
- Cream butter and brown sugar until fluffy.
- Mix in eggs and the cooled cider reduction.
- Sift and fold in flour, baking soda, cinnamon, and salt.
- Scoop batter onto lined sheets and bake at 350F for 10-12 minutes.
- Melt sugar and butter for caramel, stir in cream and salt, then simmer until thick.
- Pipe caramel onto cooled cakes and top with a second cake.
