Description
A chilled, no-bake twist on the traditional Christmas pudding, combining rich vanilla ice cream with spiced dried fruits and a hint of brandy.

- 1 quart (950g) premium vanilla ice cream
- 1 cup mixed dried fruits (sultanas, raisins, currants)
- 1/4 cup candied orange peel, finely chopped
- 2 tablespoons brandy or dark rum
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Remove vanilla ice cream from the freezer and let it soften for 5-10 minutes until stirrable.
- Combine mixed dried fruits and candied orange peel in a small bowl with the brandy or rum; let soak for 10 minutes.
- Gently stir ground cinnamon and ground nutmeg into the softened ice cream using a spatula.
- Fold the soaked fruit mixture into the spiced ice cream until evenly distributed.
- Transfer the mixture into a freezer-safe container or loaf tin and press down to remove air gaps.
- Cover the surface with parchment paper and freeze for at least 4 hours or overnight before serving.
