Description

A hearty, layered Tex-Mex casserole featuring seasoned ground beef, black beans, corn, and melted Monterey Jack cheese separated by soft tortillas.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained
  • 1 cup frozen corn
  • 1 cup salsa
  • 810 flour or corn tortillas
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 350F and grease a 9×13 inch baking dish.
  2. Brown ground beef and onion in a skillet over medium-high heat until cooked through.
  3. Drain excess grease, then stir in taco seasoning and 1/4 cup water; simmer until thickened.
  4. Stir in black beans, corn, and salsa; remove from heat.
  5. Spread a layer of beef mixture on the bottom of the dish, topped with a layer of tortillas.
  6. Repeat layers until ingredients are used, ending with a layer of tortillas.
  7. Top with shredded Monterey Jack cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
