Description

A comforting baked dish combining shredded chicken, taco seasoning, and a creamy cheese sauce. Topped with melted cheddar for a golden finish.

  • 3 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup salsa
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup frozen corn, thawed and drained
  • 1 can (15 oz) black beans, drained and rinsed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, blend softened cream cheese, salsa, and taco seasoning until smooth.
  3. Fold in the shredded chicken, drained corn, and black beans until evenly coated.
  4. Spread the mixture into the prepared baking dish and smooth the top with a spatula.
  5. Sprinkle shredded cheddar cheese evenly over the top of the mixture.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Allow the casserole to rest for 5 minutes before serving.
