A delicious fusion dessert featuring a creamy cheesecake and tart cherry filling wrapped in a crispy, fried egg roll shell.

- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup pitted cherries, chopped
- 2 tbsp cornstarch
- 12 egg roll wrappers
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Beat softened cream cheese, sugar, and vanilla extract together until smooth and fluffy.
- Simmer chopped cherries with cornstarch and a splash of water in a small pan until thickened into a jam-like consistency; let cool.
- Gently fold the cooled cherry mixture into the cream cheese filling, leaving some swirls.
- Place one tablespoon of filling in the center of each egg roll wrapper.
- Moisten the edges of the wrapper with water and roll tightly, tucking in the corners to seal.
- Heat oil in a deep pan to 350°F (175°C).
- Fry rolls in batches for 2-3 minutes per side until golden brown and crispy.
- Drain on paper towels and dust with powdered sugar before serving.
