A comforting, creamy, and hearty chicken and rice soup made entirely in a slow cooker. Perfect for chilly evenings and easy cleanup.

- 1.5 lbs chicken breasts
- 6 cups chicken broth
- 1 cup uncooked white rice
- 3 carrots, diced
- 2 celery stalks, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Place diced carrots, celery, and onion in the bottom of the crock pot.
- Place chicken breasts on top of the vegetables.
- Pour in chicken broth and stir in thyme, salt, pepper, and minced garlic.
- Cover and cook on Low for 6-8 hours or High for 3-4 hours.
- Remove chicken to a bowl and shred with two forks; return chicken to the pot.
- Stir in uncooked white rice and cook on High for 30-45 minutes until rice is tender.
- Garnish with fresh parsley and serve hot.
