Description

A comforting, slow-cooked casserole featuring tender pork shoulder and tart Granny Smith apples in a savory sage-infused sauce.


Ingredients

  • 3 lbs Pork Shoulder, cubed
  • 3 Granny Smith Apples, peeled and cubed
  • 1 large Yellow Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 1 tbsp Fresh Sage, chopped
  • 2 tbsp Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in an oven-proof skillet over medium-high heat and sear pork cubes until browned on all sides.
  3. Remove pork and sauté onions until translucent, then add garlic for 1 minute.
  4. Pour in chicken broth and scrape the pan bottom to release browned bits.
  5. Return pork to the pan and surround with apple chunks and fresh sage.
  6. Cover with a lid or foil and bake for 2.5 to 3 hours until pork is tender.
  7. Remove lid, increase oven heat to 375°F, and bake for another 20 minutes to brown the top.
  8. Let the casserole rest for 10 minutes before serving.
