- 3 lbs Pork Shoulder, cubed
- 3 Granny Smith Apples, peeled and cubed
- 1 large Yellow Onion, chopped
- 4 cloves Garlic, minced
- 2 cups Chicken Broth
- 1 tbsp Fresh Sage, chopped
- 2 tbsp Olive Oil
- Salt and Black Pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Heat olive oil in an oven-proof skillet over medium-high heat and sear pork cubes until browned on all sides.
- Remove pork and sauté onions until translucent, then add garlic for 1 minute.
- Pour in chicken broth and scrape the pan bottom to release browned bits.
- Return pork to the pan and surround with apple chunks and fresh sage.
- Cover with a lid or foil and bake for 2.5 to 3 hours until pork is tender.
- Remove lid, increase oven heat to 375°F, and bake for another 20 minutes to brown the top.
- Let the casserole rest for 10 minutes before serving.
