Description

A traditional, creamy Nordic salmon soup featuring tender fish, hearty potatoes, and aromatic fresh dill.


Ingredients

  • 1.5 lbs salmon fillet, cubed
  • 1 lb potatoes, cubed
  • 2 carrots, sliced
  • 1 large leek, sliced
  • 3 tbsp butter
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat and sauté leeks and carrots until softened.
  2. Add fish stock and potatoes, then simmer for 15-20 minutes until potatoes are tender.
  3. Stir in heavy cream and a portion of the chopped dill; bring to a low simmer.
  4. Gently add salmon cubes and poach for 3-5 minutes until opaque.
  5. Remove from heat, stir in lemon juice and remaining fresh dill.
  6. Season with salt and pepper before serving hot.
