Description

A rich and comforting winter squash bake featuring a creamy cheese sauce and a salty, buttery Ritz cracker crust.


Ingredients

  • 3 cups cubed winter squash (butternut or acorn)
  • 1/2 cup unsalted butter, melted
  • 1.5 cups crushed Ritz crackers
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Steam or roast squash cubes until tender, then let cool slightly.
  3. In a large bowl, stir together squash, heavy cream, parmesan, and garlic powder.
  4. Pour the squash mixture into the prepared baking dish and smooth the top.
  5. In a small bowl, toss crushed Ritz crackers with melted butter until coated.
  6. Sprinkle the cracker mixture evenly over the squash.
  7. Bake for 25-30 minutes until the topping is golden and the casserole is bubbling.
