- ½ cup sour cream
- ¾ cup granulated sugar
- ¼ cup fresh lemon juice (about 2 lemons)
- Zest of 1 lemon
- 1 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of the prepared pan.
- In another bowl, beat softened cream cheese until smooth. Add sour cream, sugar, lemon juice, lemon zest, vanilla extract, and eggs; mix until fully combined and smooth.
- Pour the cheesecake filling over the crust and bake for 25-30 minutes until just set but slightly jiggly in the center.
- Remove from oven and cool to room temperature before refrigerating for at least 4 hours or overnight.
- Once chilled, lift out using parchment paper edges and cut into squares to serve.
