A luxurious French-style brioche filled with a thick vanilla bean custard and rich semi-sweet chocolate chips. Perfectly buttery, airy, and indulgent.

- 3 cups bread flour
- 1 cup whole milk, lukewarm
- 1/2 cup unsalted butter, softened
- 2 large egg yolks
- 2 tsp instant yeast
- 1/4 cup granulated sugar (for dough)
- 1/2 cup granulated sugar (for custard)
- 2 tbsp cornstarch
- 2 cups whole milk (for custard)
- 1 tbsp vanilla bean paste
- 1/2 cup semi-sweet chocolate chips
- 1 egg for egg wash
Instructions
- Whisk 2 cups milk, 1/2 cup sugar, and cornstarch over medium heat until thick. Stir in vanilla bean paste, cover with plastic wrap, and chill for at least 4 hours.
- Combine bread flour, yeast, sugar, 1 cup warm milk, and egg yolks. Knead until smooth.
- Gradually add softened butter, kneading until the dough is glossy and elastic.
- Let the dough rise in a warm place for 2 hours until doubled in size.
- Roll the dough into a large rectangle on a floured surface.
- Spread the chilled vanilla custard over the dough, leaving a 1-inch border.
- Sprinkle chocolate chips evenly over the custard.
- Roll the dough tightly into a log and slice into 12 equal rounds.
- Place on a baking sheet, brush with egg wash, and bake at 350F (175C) for 20-25 minutes until golden brown.
