Description

A luxurious French-style brioche filled with a thick vanilla bean custard and rich semi-sweet chocolate chips. Perfectly buttery, airy, and indulgent.


Ingredients

  • 3 cups bread flour
  • 1 cup whole milk, lukewarm
  • 1/2 cup unsalted butter, softened
  • 2 large egg yolks
  • 2 tsp instant yeast
  • 1/4 cup granulated sugar (for dough)
  • 1/2 cup granulated sugar (for custard)
  • 2 tbsp cornstarch
  • 2 cups whole milk (for custard)
  • 1 tbsp vanilla bean paste
  • 1/2 cup semi-sweet chocolate chips
  • 1 egg for egg wash

Instructions

  1. Whisk 2 cups milk, 1/2 cup sugar, and cornstarch over medium heat until thick. Stir in vanilla bean paste, cover with plastic wrap, and chill for at least 4 hours.
  2. Combine bread flour, yeast, sugar, 1 cup warm milk, and egg yolks. Knead until smooth.
  3. Gradually add softened butter, kneading until the dough is glossy and elastic.
  4. Let the dough rise in a warm place for 2 hours until doubled in size.
  5. Roll the dough into a large rectangle on a floured surface.
  6. Spread the chilled vanilla custard over the dough, leaving a 1-inch border.
  7. Sprinkle chocolate chips evenly over the custard.
  8. Roll the dough tightly into a log and slice into 12 equal rounds.
  9. Place on a baking sheet, brush with egg wash, and bake at 350F (175C) for 20-25 minutes until golden brown.
