  • 2 large yellow onions, sliced
  • 2 tablespoons unsalted butter
  • 1 cup beef broth
  • 8 oz fettuccine or penne pasta
  • 1 tablespoon balsamic vinegar
  • 1 cup Gruyère cheese, shredded (divided)
  • Fresh thyme leaves for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt butter over medium heat. Add sliced onions and cook for 20-25 minutes until caramelized, stirring occasionally.
  2. Meanwhile, cook pasta according to package instructions until al dente; drain and set aside.
