- 2 large yellow onions, sliced
- 2 tablespoons unsalted butter
- 1 cup beef broth
- 8 oz fettuccine or penne pasta
- 1 tablespoon balsamic vinegar
- 1 cup Gruyère cheese, shredded (divided)
- Fresh thyme leaves for garnish (optional)
- Salt and pepper to taste
Instructions
- In a large skillet, melt butter over medium heat. Add sliced onions and cook for 20-25 minutes until caramelized, stirring occasionally.
- Meanwhile, cook pasta according to package instructions until al dente; drain and set aside.
- Add balsamic vinegar to caramelized onions; cook for an additional 2 minutes before pouring in beef broth. Bring to a simmer.
- Mix cooked pasta into the skillet with the onion mixture; toss well to coat.
- Remove from heat and stir in half of the Gruyère cheese until melted. Season with salt and pepper as needed.
