- 1.5 cups all-purpose flour
- 3.5 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1.25 cups milk
- 1 egg
- 3 tablespoons melted unsalted butter
- 1 tablespoon fresh lemon zest
- Gel food coloring (purple, orange, green)
Instructions
- Whisk together flour, baking powder, sugar, and salt in a large bowl.
- In a separate bowl, beat the egg into the milk and melted butter, then stir in the lemon zest.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter into separate bowls and stir in gel food colors of your choice.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour 1/4 cup of batter per pancake onto the skillet.
- Cook until bubbles form on top and edges are set, then flip and cook until golden on the other side.
