- 1 lb fresh carrots (varied colors)
- 1 cup semi-pearled farro
- 1 can (15 oz) chickpeas, rinsed and drained
- 3 tbsp extra virgin olive oil
- 1/2 cup crème fraîche
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the carrots; cut into uniform half-inch pieces. Toss with 2 tablespoons of olive oil, salt, and pepper on the baking sheet.
- Roast the carrots for about 25-30 minutes until tender and caramelized, flipping halfway through.
- While the carrots roast, cook farro according to package instructions (typically boil in salted water for 20-25 minutes). Drain excess water.
- In a large bowl, combine cooked farro with rinsed chickpeas. Drizzle with remaining olive oil and lemon juice; season to taste.
- Once roasted, mix carrots with farro and chickpeas. Serve topped with herbed crème fraîche.
