  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 2 cups bell peppers, sliced (mixed colors)
  • 1 cup red onion, sliced
  • 4 pita bread (soft)
  • Tzatziki sauce (optional)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken thighs; toss to coat. Marinate for at least 30 minutes or overnight.

  4. Place marinated chicken among the vegetables on the pan.
