- 1 lb ground beef (80/20)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 12 corn tortillas
- 2 cups red enchilada sauce
- 3 cups shredded Monterey Jack cheese
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F and grease a 9×13 baking dish.
- Brown ground beef and onion in a skillet until cooked through.
- Stir in minced garlic, chili powder, and cumin; cook for 1 minute.
- Add a small amount of enchilada sauce to the beef mixture and remove from heat.
- Warm tortillas in the microwave with a damp paper towel for 30 seconds.
- Spread a layer of sauce in the baking dish.
- Fill tortillas with beef and cheese, roll tightly, and place seam-side down in the dish.
- Cover with remaining sauce and cheese, then bake for 20 minutes.
