A hearty, one-pot slow cooker meal combining tender shredded chicken and fluffy rice infused with zesty salsa and taco spices.
Ingredients

- 1.5 lbs boneless skinless chicken thighs
- 1 cup long grain white rice, uncooked
- 1 cup salsa
- 1.5 cups chicken broth
- 2 tbsp taco seasoning
- 1 tbsp olive oil
- Optional: Avocado, cilantro, sour cream, lime, cotija cheese
Instructions
- Rub chicken thighs with olive oil and taco seasoning.
- Place chicken in the bottom of the slow cooker.
- Pour salsa and chicken broth over the chicken.
- Cover and cook on low for 6 hours.
- Stir in the uncooked white rice and cook for another hour.
- Fluff with a fork and serve with desired toppings.
