Description

A hearty, one-pot slow cooker meal combining tender shredded chicken and fluffy rice infused with zesty salsa and taco spices.


Ingredients

Scale
  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup long grain white rice, uncooked
  • 1 cup salsa
  • 1.5 cups chicken broth
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • Optional: Avocado, cilantro, sour cream, lime, cotija cheese

Instructions

  1. Rub chicken thighs with olive oil and taco seasoning.
  2. Place chicken in the bottom of the slow cooker.
  3. Pour salsa and chicken broth over the chicken.
  4. Cover and cook on low for 6 hours.
  5. Stir in the uncooked white rice and cook for another hour.
  6. Fluff with a fork and serve with desired toppings.
