- 1.5 lbs ground beef
- 3 large potatoes, peeled and diced into 1/2 inch cubes
- 3 large carrots, peeled and sliced into 1/2 inch rounds
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil (if needed for browning)
Instructions
- Preheat your oven to 375F (190C) and grease a 9×13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the skillet and sauté for 3-5 minutes until softened.
- Transfer the beef and onion mixture into the prepared baking dish.
- Stir in the diced potatoes, sliced carrots, dried thyme, dried rosemary, salt, and black pepper until evenly distributed.
- Pour the beef broth over the mixture, stirring gently to incorporate.
- Cover the dish tightly with aluminum foil and bake for 30 to 35 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes until the potatoes are tender and the top is lightly browned.
- Let the casserole rest for 5-10 minutes before serving.
