Description

A rustic and comforting one-pan bake combining savory ground beef with tender potatoes and carrots in a light beef gravy.


Ingredients

  • 1.5 lbs ground beef
  • 3 large potatoes, peeled and diced into 1/2 inch cubes
  • 3 large carrots, peeled and sliced into 1/2 inch rounds
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil (if needed for browning)

Instructions

  1. Preheat your oven to 375F (190C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  3. Add the diced onion and minced garlic to the skillet and sauté for 3-5 minutes until softened.
  4. Transfer the beef and onion mixture into the prepared baking dish.
  5. Stir in the diced potatoes, sliced carrots, dried thyme, dried rosemary, salt, and black pepper until evenly distributed.
  6. Pour the beef broth over the mixture, stirring gently to incorporate.
  7. Cover the dish tightly with aluminum foil and bake for 30 to 35 minutes.
  8. Remove the foil and bake for an additional 10 to 15 minutes until the potatoes are tender and the top is lightly browned.
  9. Let the casserole rest for 5-10 minutes before serving.
