  • 1 head of cauliflower (about 600g), cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup brown rice or quinoa (uncooked)
  • 1 can black beans (15 oz), rinsed and drained
  • 2 cups fresh spinach or kale
  • 1 medium avocado, sliced
  • ½ cup pico de gallo
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets in a bowl with olive oil, salt, pepper, cumin, paprika, and garlic powder until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet lined with parchment paper. Roast for about 25-30 minutes until golden brown and tender.
  4. While the cauliflower roasts, cook brown rice or quinoa according to package instructions.
  5. In serving bowls, layer cooked rice or quinoa as the base.
  6. Top each bowl with roasted cauliflower, black beans, fresh greens, sliced avocado, pico de gallo, and drizzle lime juice over the top before serving.
