- 1 cup brown rice or quinoa (uncooked)
- 1 can black beans (15 oz), rinsed and drained
- 2 cups fresh spinach or kale
- 1 medium avocado, sliced
- ½ cup pico de gallo
- Juice of 1 lime
Instructions
- Preheat your oven to 425°F (220°C).
- Toss cauliflower florets in a bowl with olive oil, salt, pepper, cumin, paprika, and garlic powder until evenly coated.
- Spread the seasoned cauliflower on a baking sheet lined with parchment paper. Roast for about 25-30 minutes until golden brown and tender.
