- 12 oz semi-sweet chocolate chips
- 1/4 cup unsalted butter
- 1 tsp peppermint extract
- 1 1/2 cups powdered sugar
- 1 drop green food coloring
Instructions
- Combine chocolate chips and butter in a microwave-safe bowl.
- Heat in 30-second intervals, stirring between each, until completely smooth.
- Stir in the peppermint extract until fully combined.
- Pour the chocolate mixture over the rice cereal in a large bowl and fold gently until coated.
- Mix powdered sugar and green food coloring in a large zip-top bag.
- Add the chocolate-coated cereal to the bag and shake until evenly coated in sugar.
- Spread on a parchment-lined sheet and let set for 20 minutes.
