- 8 oz shrimp, peeled and deveined
- 1/4 tsp saffron threads
- 1 red bell pepper, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 cup fresh pea pods
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent.
- Add chicken pieces and cook until browned.
- Stir in diced tomatoes and red bell pepper; let simmer for about five minutes.
- Mix in rice and saffron dissolved in warm broth; stir well.
- Pour enough broth to cover the rice; bring to a boil, then reduce heat to low and simmer uncovered for about 20 minutes or until rice is tender.
