  • 1 lb chicken breast, diced
  • 8 oz shrimp, peeled and deveined
  • 1/4 tsp saffron threads
  • 1 red bell pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 cup fresh pea pods
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent.
  2. Add chicken pieces and cook until browned.
  3. Stir in diced tomatoes and red bell pepper; let simmer for about five minutes.
  4. Mix in rice and saffron dissolved in warm broth; stir well.
  5. Pour enough broth to cover the rice; bring to a boil, then reduce heat to low and simmer uncovered for about 20 minutes or until rice is tender.
  6. Add shrimp during the last five minutes of cooking until pink. Garnish with fresh pea pods before serving.
