  • 1 bone-in ham (about 810 pounds)
  • 1 cup Campari
  • 1 cup sweet vermouth
  • 1/2 cup gin
  • 1 cup brown sugar
  • 1/4 cup Dijon mustard

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Score the surface of the ham in a diamond pattern.
  3. In a medium saucepan, combine Campari, sweet vermouth, gin, brown sugar, and Dijon mustard. Simmer for about 10 minutes until thickened.
  4. Place the ham in a roasting pan and brush half of the glaze over it.
  5. Cover loosely with aluminum foil and bake for about 1 hour (15-18 minutes per pound).
  6. Remove the foil during the last 30 minutes and baste every 10 minutes until caramelized.
