Juicy bone-in pork chops seared to perfection and coated in a sticky, smoky glaze made from fresh summer peaches and Kentucky bourbon.

- 4 center-cut bone-in pork chops
- 2 ripe peaches, diced
- 1/3 cup bourbon
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 tbsp vegetable oil
Instructions
- Pat pork chops dry and season with salt, pepper, and smoked paprika.
- Heat oil in a cast-iron skillet over high heat; sear chops for 3-5 minutes per side.
- In a small saucepan, whisk bourbon, brown sugar, vinegar, and garlic over medium heat.
- Add diced peaches to the sauce and simmer until slightly softened.
- Pour a portion of the glaze into the skillet with the pork to deglaze the pan.
- Baste the chops with the glaze for the final 2 minutes of cooking.
- Remove from heat and let rest for 5 minutes before serving.
