- 1 1/2 cups milk
- 2 large eggs
- 4 tablespoons melted butter
- 1 cup finely diced apples
- Butter for frying
- Maple syrup for serving
Instructions
- Whisk together flour, baking powder, cinnamon, and salt in a large mixing bowl.
- In a separate bowl, whisk the eggs, milk, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined (small lumps are okay).
- Gently fold in the diced apples with a spatula.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour 1/4 cup of batter per pancake onto the hot skillet.
- Cook until bubbles form on the surface and edges look dry, then flip.
- Cook for another 2 minutes until both sides are golden brown.
