Ingredients

- 1 lb chicken breast, cubed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 head romaine lettuce, chopped
- 1 cup corn (fresh or frozen)
- 1 can (15oz) black beans, drained
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/2 cup extra virgin olive oil
- 1 tbsp honey
Instructions
- Season cubed chicken with cumin, paprika, salt, and pepper.
- Sauté chicken in a hot skillet until golden brown and cooked through.
- Blend cilantro, lime juice, olive oil, and honey until smooth for the vinaigrette.
- Place chopped romaine in a large bowl.
- Add corn, black beans, tomatoes, and red onion to the greens.
- Top with warm chicken and drizzle with the vinaigrette.
