  • 8 oz penne pasta
  • 1 lb boneless, skinless chicken breast, diced
  • 8 oz Andouille sausage, sliced
  • 1 tbsp Cajun seasoning
  • 1 cup coconut milk
  • 1 cup low-sodium chicken broth
  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the diced onion until translucent. Add minced garlic and cook for an additional minute.
  2. Add the diced chicken breast and sliced sausage to the pot. Cook for about 5-7 minutes until browned.
  3. Stir in chopped bell peppers and continue cooking for another 3-4 minutes until they soften.
  4. Sprinkle in the Cajun seasoning, stir well, then pour in coconut milk and enough broth to cover the pasta once added.
  5. Bring to a boil before adding the pasta into the pot. Cover and cook according to package instructions until al dente.
  6. Remove from heat and let sit for a few minutes before stirring everything together. Serve hot with fresh herbs if desired.
