- 8 oz penne pasta
- 1 lb boneless, skinless chicken breast, diced
- 8 oz Andouille sausage, sliced
- 1 tbsp Cajun seasoning
- 1 cup coconut milk
- 1 cup low-sodium chicken broth
- 1 cup red bell pepper, chopped
- 1 cup green bell pepper, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil and sauté the diced onion until translucent. Add minced garlic and cook for an additional minute.
- Add the diced chicken breast and sliced sausage to the pot. Cook for about 5-7 minutes until browned.
- Stir in chopped bell peppers and continue cooking for another 3-4 minutes until they soften.
- Sprinkle in the Cajun seasoning, stir well, then pour in coconut milk and enough broth to cover the pasta once added.
- Bring to a boil before adding the pasta into the pot. Cover and cook according to package instructions until al dente.
