Description

Velvety smooth mashed potatoes infused with savory garlic, nutty parmesan cheese, and fresh garden herbs for an elevated side dish.


Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place cubed potatoes in a large pot of cold salted water and bring to a boil.
  2. Simmer the potatoes for 15-20 minutes until fork-tender.
  3. Drain the potatoes thoroughly and return them to the warm pot for 1 minute to dry.
  4. Mash the potatoes using a masher or ricer until smooth.
  5. Stir in butter and heavy cream until fully incorporated and creamy.
  6. Fold in the grated parmesan cheese, minced garlic, and chopped parsley.
