- 1 lb boneless, skin‑less chicken breasts, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup bread crumbs
- 1 tsp Italian seasoning
- Pinch of salt and pepper
- Zest of 1 lemon
- Chopped fresh parsley (for garnish)
- Wooden or metal skewers, soaked if wooden
Instructions
- Preheat grill to 400°F.
- Combine olive oil, garlic, lemon zest, Italian seasoning, salt, and pepper in a bowl.
- Add chicken cubes to the mixture and toss; let rest 5 minutes.
- Mix Parmesan, bread crumbs, and parsley in a shallow dish.
- Thread chicken onto skewers, roll in Parmesan mixture to coat.
- Grill skewers 3–4 minutes per side until golden and cooked through.
- Remove, drizzle extra oil for shine, and serve immediately.
