Description

Ingredients

  • 1 lb boneless, skin‑less chicken breasts, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1 tsp Italian seasoning
  • Pinch of salt and pepper
  • Zest of 1 lemon
  • Chopped fresh parsley (for garnish)
  • Wooden or metal skewers, soaked if wooden

Instructions

  1. Preheat grill to 400°F.
  2. Combine olive oil, garlic, lemon zest, Italian seasoning, salt, and pepper in a bowl.
  3. Add chicken cubes to the mixture and toss; let rest 5 minutes.
  4. Mix Parmesan, bread crumbs, and parsley in a shallow dish.
  5. Thread chicken onto skewers, roll in Parmesan mixture to coat.
