With a crispy exterior and a creamy, cheesy interior, these pancakes are easy to make and customizable to your taste. Ingredients

Scale
  • 2 medium potatoes, peeled and grated (about 400g)
  • 1 medium onion, finely chopped
  • 1 cup shredded cheddar cheese (about 100g)
  • ½ cup all-purpose flour (about 60g)
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Oil or butter for frying

Instructions

  1. Squeeze excess moisture from the grated potatoes using a clean kitchen towel.
  2. In a skillet, heat oil or butter over medium heat and sauté the chopped onions until translucent.
  3. In a large bowl, combine grated potatoes, sautéed onions, cheese, flour, beaten eggs, salt, and pepper. Mix well.
  4. Heat oil in the same skillet over medium heat. Drop spoonfuls of the potato mixture into the skillet and flatten slightly.
  5. Cook for about 4-5 minutes on each side or until golden brown.
  6. Transfer cooked pancakes to a paper towel-lined plate to remove excess oil before serving warm.
