Description

A nutrient-dense autumn salad featuring massaged kale, crisp apples, and a signature maple balsamic dressing for a sweet and savory balance.


Ingredients

Scale
  • 4 cups chopped kale
  • 2 cups baby spinach
  • 1 large Granny Smith apple, sliced
  • 1/2 cup walnuts, toasted
  • 1/4 cup goat cheese, crumbled
  • 1/3 cup dried cranberries
  • 3 tbsp maple syrup
  • 3 tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Remove kale ribs and tear leaves into bite-sized pieces.
  2. Massage kale with a touch of olive oil for 2 minutes until softened.
  3. Whisk maple syrup, balsamic vinegar, and olive oil until emulsified.
  4. Toss massaged kale and baby spinach in a large bowl.
  5. Fold in sliced apples, dried cranberries, and toasted walnuts.
  6. Crumble goat cheese over the top of the salad.
