- 2 lbs beef chuck roast, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) sweet corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat oil in a large pot and sear beef cubes until browned on all sides.
- Sauté onions and garlic in the same pot until translucent.
- Stir in smoked paprika and cumin for 60 seconds.
- Add diced tomatoes and beef broth, scraping the pot bottom.
- Stir in kidney beans and sweet corn.
- Simmer covered on low heat for 90 minutes until beef is tender.
