- 2 cans (15oz) corn, drained
- 2 cans (15oz) black beans, rinsed
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat and sauté onions until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in cumin and smoked paprika, toasting for 30 seconds.
- Add corn, black beans, and chicken broth; simmer for 15-20 minutes.
- Optional: Use an immersion blender to pulse a small portion of the soup for thickness.
