  • 1 medium onion, diced
  • 2 carrots, sliced into rounds
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken or vegetable broth
  • 3 cups cooked ham, cubed
  • 1 small head green cabbage, shredded
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until onions are translucent.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  4. Add the cubed ham (and a ham bone if using). Simmer for an additional 15 minutes to infuse the broth with smoky flavor.
  5. Stir in the shredded cabbage. Cover and simmer for 15-20 minutes until the cabbage is tender but not mushy.
  6. Season with black pepper. Taste before adding salt due to the saltiness of the ham.
  7. Remove from heat and garnish with fresh parsley before serving.
