- 1 lb ground turkey
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a medium bowl, combine ground turkey, breadcrumbs, beaten egg, salt, and pepper. Mix gently.
- Roll the turkey mixture into 1-inch meatballs.
- Heat olive oil in a large pot over medium-high heat. Brown meatballs on all sides, then remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened (about 5-7 minutes).
- Stir in minced garlic and thyme; cook for 1 minute until fragrant.
- Pour in chicken broth and scrape the bottom of the pot to release brown bits.
- Return meatballs to the pot. Bring to a light simmer and cook for 15 minutes.
- Stir in fresh parsley and adjust seasoning with salt and pepper before serving.
