Description

Ingredients

  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine ground turkey, breadcrumbs, beaten egg, salt, and pepper. Mix gently.
  2. Roll the turkey mixture into 1-inch meatballs.
  3. Heat olive oil in a large pot over medium-high heat. Brown meatballs on all sides, then remove and set aside.
  4. In the same pot, sauté onion, carrots, and celery until softened (about 5-7 minutes).
  5. Stir in minced garlic and thyme; cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape the bottom of the pot to release brown bits.
  7. Return meatballs to the pot. Bring to a light simmer and cook for 15 minutes.
  8. Stir in fresh parsley and adjust seasoning with salt and pepper before serving.
