Description

Rich and creamy homemade peanut butter cups with a snappy chocolate shell. A perfect DIY alternative to the classic store-bought candy.


Ingredients

  • 1.5 cups semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons melted unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut oil

Instructions

  1. Melt chocolate chips with coconut oil in a microwave in 30-second intervals until smooth.
  2. Spoon melted chocolate into mini muffin liners, pressing it up the sides.
  3. Freeze chocolate shells for 10 minutes until firm.
  4. Mix peanut butter, powdered sugar, melted butter, and vanilla in a bowl until smooth.
  5. Spoon the peanut butter filling into the chilled chocolate shells.
  6. Pour the remaining melted chocolate over the filling to seal the cups.
  7. Refrigerate for at least one hour before serving.
