- 1.5 cups semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar
- 2 tablespoons melted unsalted butter
- 1/2 teaspoon vanilla extract
- 1 tablespoon coconut oil
Instructions
- Melt chocolate chips with coconut oil in a microwave in 30-second intervals until smooth.
- Spoon melted chocolate into mini muffin liners, pressing it up the sides.
- Freeze chocolate shells for 10 minutes until firm.
- Mix peanut butter, powdered sugar, melted butter, and vanilla in a bowl until smooth.
- Spoon the peanut butter filling into the chilled chocolate shells.
- Pour the remaining melted chocolate over the filling to seal the cups.
- Refrigerate for at least one hour before serving.
