Description
Sweet and spicy glazed salmon fillets baked atop a bed of seasoned rice in muffin tins. A high-protein, portable meal perfect for prep.
Ingredients

- 1 lb salmon fillet, cut into 12 rounds
- 3 cups cooked jasmine rice
- 3 tbsp honey
- 2 tbsp Sriracha
- 1 tbsp soy sauce
- 1 tsp minced garlic
- 1 tbsp sesame oil
- Salt to taste
- Sliced green onions for garnish
Instructions
- Preheat oven to 400F and grease a standard muffin tin.
- Mix cooked rice with sesame oil and salt, then press firmly into the muffin cups.
- Whisk together honey, Sriracha, soy sauce, and garlic in a small bowl.
- Brush the glaze generously over the salmon pieces.
- Place one piece of glazed salmon on top of each rice cup.
- Bake for 12-15 minutes until the glaze is bubbling and salmon is cooked through.
- Let cool for 5 minutes before removing from the tin.
