Description

Sweet and spicy glazed salmon fillets baked atop a bed of seasoned rice in muffin tins. A high-protein, portable meal perfect for prep.


Ingredients

Scale
  • 1 lb salmon fillet, cut into 12 rounds
  • 3 cups cooked jasmine rice
  • 3 tbsp honey
  • 2 tbsp Sriracha
  • 1 tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tbsp sesame oil
  • Salt to taste
  • Sliced green onions for garnish

Instructions

  1. Preheat oven to 400F and grease a standard muffin tin.
  2. Mix cooked rice with sesame oil and salt, then press firmly into the muffin cups.
  3. Whisk together honey, Sriracha, soy sauce, and garlic in a small bowl.
  4. Brush the glaze generously over the salmon pieces.
  5. Place one piece of glazed salmon on top of each rice cup.
  6. Bake for 12-15 minutes until the glaze is bubbling and salmon is cooked through.
  7. Let cool for 5 minutes before removing from the tin.
