  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup ripe pears, diced (approximately 2 medium pears)
  • 8 oz cream cheese, softened
  • 2 tsp fresh thyme, chopped (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a mixing bowl, combine cream cheese, diced pears, thyme, salt, and pepper until well mixed.
  3. Carefully slice pockets into each chicken breast without cutting all the way through.
