Description

A luxurious cheesecake topped with a honey-glazed fig swirl. Perfectly creamy with a buttery graham cracker crust.


Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tbsp melted unsalted butter
  • 24 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1012 fresh figs, sliced
  • 3 tbsp honey
  • 1 tbsp lemon juice

Instructions

  1. Combine graham cracker crumbs and melted butter; press into a 9-inch springform pan and bake at 350°F for 10 minutes.
  2. Beat cream cheese and sugar until smooth and fluffy.
  3. Add eggs one by one on low speed, followed by vanilla extract.
  4. Pour the batter over the cooled crust.
  5. Sauté sliced figs with honey and lemon juice over medium heat until jammy.
  6. Spoon fig mixture onto the batter and swirl with a knife.
  7. Place pan in a water bath and bake at 325°F for 50-60 minutes until edges are set.
  8. Cool in the oven with the door cracked for 30 minutes, then refrigerate for 6 hours.
