- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup whole milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 ripe avocado, diced
- 1/2 cup cucumber, diced
- 1 cup mango, diced
- 1/2 cup pineapple, diced
- 1/4 cup red onion, finely diced
- 2 tbsp lime juice
- 3 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp red chili flakes
- Pinch sea salt
Instructions
- Preheat oven to 350°F and grease a 9-inch cake pan.
- Whisk flour, sugar, baking powder, and salt in a bowl.
- Beat butter, milk, eggs, and vanilla until glossy.
- Combine wet and dry ingredients until just mixed.
- Pour batter into pan, bake 20–25 min until toothpick comes out clean.
- Cool completely, then spread avocado, cucumber, mango, pineapple, onion, lime, soy sauce, sesame oil, ginger, chili flakes, and sea salt evenly.
- Refrigerate 30 min before serving.
