Ingredients

  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ripe avocado, diced
  • 1/2 cup cucumber, diced
  • 1 cup mango, diced
  • 1/2 cup pineapple, diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp lime juice
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp red chili flakes
  • Pinch sea salt

Instructions

  1. Preheat oven to 350°F and grease a 9-inch cake pan.
  2. Whisk flour, sugar, baking powder, and salt in a bowl.
  3. Beat butter, milk, eggs, and vanilla until glossy.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into pan, bake 20–25 min until toothpick comes out clean.
  6. Cool completely, then spread avocado, cucumber, mango, pineapple, onion, lime, soy sauce, sesame oil, ginger, chili flakes, and sea salt evenly.
  7. Refrigerate 30 min before serving.
