  • 2 pounds chicken thighs, boneless and skinless
  • 1 cup coconut milk
  • ½ cup natural peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon curry powder
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced

Instructions

  1. In a mixing bowl, whisk together the coconut milk, peanut butter, soy sauce, lime juice, curry powder, garlic, and ginger until smooth.
  2. Add the chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes or overnight.
