  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh apple cider
  • 1/2 cup brown sugar
  • 1 tsp fresh thyme
  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  2. In a saucepan, combine apple cider, brown sugar, and thyme. Simmer for about 5 minutes until slightly thickened.
  3. Place seasoned chicken in a baking dish and pour glaze over it. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  4. While the chicken bakes, mix shredded cabbages and carrots in a bowl. Whisk together vinegar, olive oil, salt, and pepper; toss with veggies.
  5. Once cooked, let chicken rest for 5 minutes before slicing and serve over slaw with extra glaze drizzled on top.
