- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh apple cider
- 1/2 cup brown sugar
- 1 tsp fresh thyme
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup carrots, shredded
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper.
- In a saucepan, combine apple cider, brown sugar, and thyme. Simmer for about 5 minutes until slightly thickened.
- Place seasoned chicken in a baking dish and pour glaze over it. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
