- 2 cups graham cracker crumbs
- 1/2 cup melted unsalted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 3 Granny Smith apples, diced
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 325F (160C).
- Combine graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth; add eggs one at a time and stir in vanilla.
- Sauté diced apples with brown sugar and cinnamon until tender but firm.
- Pour cheesecake batter over the crust and top with the cooked apples.
- Mix flour, oats, and cold butter to make crumble; sprinkle over the apples.
- Bake for 50-60 minutes or until the edges are set but the center jiggles.
- Cool at room temperature, then refrigerate for 6+ hours.
