Ingredients
Scale
- 1 lb high-quality ground beef (80/20 ratio)
- 4 medium Russet or Yukon Gold potatoes (about 2 lbs), peeled and cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth (or vegetable broth)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
Instructions
- Prepare the ingredients by washing and peeling the potatoes; cut them into uniform cubes. Dice the onion and mince the garlic.
- In a large skillet over medium heat, add a splash of oil. Sauté the diced onion until translucent, then add the minced garlic and cook until fragrant.
- Push the onions to one side of the skillet and add the ground beef. Break it apart as it browns evenly. Season with salt, pepper, paprika, and thyme while cooking.
- Once the meat is browned, stir in the potato cubes followed by enough broth to partially cover them. Bring everything to a simmer.
- Lower the heat to medium-low, cover with a lid, and let it cook for about 25–30 minutes until potatoes are tender. Stir occasionally to prevent sticking.
- Adjust seasoning if necessary before serving hot from the pan.
