Description

Bite-sized creamy cheese balls blended with sweet pineapple and tart cranberries, rolled in a crunchy nut coating.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup crushed pineapple, well-drained
  • 1/4 cup dried cranberries, finely chopped
  • 1 tablespoon honey
  • 1/2 cup crushed macadamia nuts or walnuts
  • 2 tablespoons finely chopped dried cranberries (for coating)
  • Fresh parsley for garnish

Instructions

  1. Drain crushed pineapple through a fine-mesh sieve until no excess liquid remains.
  2. Beat softened cream cheese in a medium bowl until smooth and lump-free.
  3. Fold in the drained pineapple and chopped dried cranberries until evenly distributed.
  4. Stir in honey until the mixture is glossy and combined.
  5. Refrigerate the mixture for at least 1 hour to firm up.
  6. Scoop 1-tablespoon portions and roll into 1-inch balls using your palms.
  7. Roll each ball in a mixture of crushed nuts and extra dried cranberries until coated.
  8. Chill for 10 minutes before serving on a platter.
