- 8 oz tri-color rotini pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- ½ medium red onion, thinly sliced
- 1 cup bell peppers (mixed colors), chopped
- ½ cup black olives, sliced
- ½ cup Italian dressing (store-bought or homemade)
- ¼ cup grated Parmesan cheese
Instructions
- Cook the rotini according to package instructions in salted water until al dente. Drain and rinse under cold water.
- While the pasta cooks, prep the vegetables: halve cherry tomatoes, dice cucumber, slice red onion, and chop bell peppers.
